Tuesday meal series 4/2/13

Today's recipe is one that my wife does not make that often but, if you like chicken, and you like Oranges, you will like this.  Finally I got some pictures of the real thing too!



This can be served over yolk-free noodles.

Chicken with Orange Sauce
Vegetable oil spray
2 split chickens with bone in
1/2 teaspoon paprika
1 medium onion, sliced

Orange Sauce
1/2 cup frozen orange juice concentrate
1/3 cup water
2 tablespoons light brown sugar
2 tablespoons snipped fresh parsley
1 teaspoon low salt soy sauce
1 teaspoon dry sherry
1/2 teaspoon ground ginger

Preheat the broiler.  Preheat the oven to 350 degrees F, if using.
Lightly spray a baking sheet with vegetable oil spray.

Discard the skin and all the visible fat from the chicken.  Cut the chicken into serving pieces.  Sprinkle the chicken with paprika.  Put the chicken on the baking sheet.

Broil the chicken about 6 inches from the heat for about 2 minutes on each side, or until lightly browned.  For stovetop preparation, transfer the chicken to a Dutch oven or large, deep skillet. (For baking, trasfer to a medium casserole dish.)

Top the chicken with the onion slices.

In a small bowl, whisk together the sauce ingredients.  Pour over the chicken and onion.

Cook over medium-high heat until the sauce comes to a boil.  Reduce the heat and simmer, covered, for 55 to 60 minutes, or until the chicken is tender and no longer pink in the center.  Or bake, uncovered, for 55 to 60 minutes.

Six miles on the schedule today.  It was a really cold one for April.  25 degrees with feels like temps of 17.  What the heck?  This is crazy!  Overall a good run today.  Everything felt good but still took it a little slower.
