Weekly meal series 6/18/13

Mushroom Chicken Pizza -

This one is great and easy.  You just need to remember not to eat more than two pieces.  Haha!


1 tube (10 ounces) refrigerated pizza crust
1 can (6 ounces) Italian tomato paste
1 1/2 cups cubed cooked chicken breast
2 cups grape or cherry tomatoes, halved
1/2 cup sliced fresh mushrooms
1/4 cup sliced ripe olives
1/8 teaspoon garlic salt
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil(we dont use it)
1 1/2 cups (6 ounces) shredded part-skim mozzarella cheese

Spread pizza dough in a 15 x 10 x 1 in baking pan coated with  nonstick cooking spray.  Prick crust with a fork.  Bake at 400 degrees for 5 minutes.  Spread with tomato paste.  Sprinkle with the chicken, tomato halves, mushrooms, olives, garlic salt, salt, salt and pepper.  Drizzle with oil(not necessary)  Sprinkle with cheese.  Bake 13-16 minutes longer or until cheese is melted. 6 servings.

Nutritional Analysis:  One piece equals 319 calories, 10g fat(4g saturated fat), 46 mg cholesterol, 619 mg sodium, 32 g carbohydrates, 3 g fiber, 23 g protein.
