Monday meal series 3/4/13

4 miles on the schedule today.  Felt good overall.  I also got in my weights workout and Yoga workout as well.  Had to get up at 4:30am.  Yes, it's early but it's completed!  Can I take a nap now?

As I continue to give you weekly meals, I want you to keep in mind that most of these meals will be geared towards low in fat and/or sodium.  I've used most of these recipes to lose weight.  I've never been one to eat something that does not taste good so the key to these recipes is that they must taste good along with being healthy.  As you know, this is not always an easy combination to find.

Mushrooms with White Wine and Shallots

This is a really nice and easy side dish to add to your meal.  It's one that we use all the time.

2 tablespoons light stick margarine
1/2 cup finely chopped shallots(about 8 large)
1 pound medium fresh button mushrooms, quartered
1/2 cup dry white wine(regular or nonalcoholic)
1 tablespoon finely snipped fresh parsley
Pepper to taste

In a large nonstick skillet, melt the margarine over medium-high heat.  Swirl to coat the bottom.  Cook the shallots for 2 to 3 minutes, stirring constantly.

Add the mushrooms and wine.  Reduce the heat to medium and cook, covered, for 7 to 9 minutes.  Increase the heat to high.  Cook, uncovered, for 5 to 6 minutes, or until the juices have evaporated.

To serve, stir in the parsley and pepper.

Serves 4 but frankly my wife and I eat it all some of the times.

  2. Looks good to me! I use the same recipe for stir fried asparagus (i.e the shallots and a bit of wine)
    (Except I use olive oil rather than margarine)

    I think we both did the same thing when we got healthy...basically figured out how to change how we eat along with the running.

    1. Yes, you can't do it without changing the diet as you know. I'll have to try that recipe.
