Tuesday meal series 5/7/13

This is a kids favorite and you will like it too.
Sesame-Chicken Nuggets

Sesame Chicken Nuggets
1 lb. boneless, skinless chicken breast, cut into 1 1/2-inch cubes
3/4 cup bread crumps
1 Tablespoon sesame seeds

Marinade:
1 egg white
1/4 cup soy sauce
2 teaspoon garlic, chopped
2 teaspoon ginger, chopped(optional)
1 tablespoon sugar

Preheat oven to 400 degrees.
Marinate chicken for 1 hour.
Mix bread crumbs and sesame seeds.
Remove chicken from marinade and let excess drip off.
Dip chicken in bread crumb mixture.  Spray baking pan with oil and wipe off excess.  Place chicken nuggets on baking sheet and bake for 20 minutes or until nuggets are golden brown.

The fries I've posted the recipe previously and go great with this meal.

3 miles on the schedule today and it was a nice run indeed.  The Kinvara 4's are really becoming a staple in my training.  I'm really loving the comfort of these shoes.  Here's a picture from this morning's run.  It's nice to see some light out there and today was a beautiful morning.
